However, it's not easy to prepare avocado. Not to mention that avocado is pretty expensive here in Malaysia. Thus I am always a bit reluctant to finish 1 whole avocado in 1 serving. But avocado oxidize very fast if it is not finished in a few hours. This is where this recipe comes in handy because it can prevent the avocado to oxidize and yet I can have delicious avocado ice cream anytime.
It's actually pretty easy to prepare:
Ingredients:
1 avocado
250ml heavy cream
3 tablespoon condensed milk
Vanilla extract
To start, blend the avocado with a bit of heavy cream and condensed milk in a blender until there are no more lumps left. It is highly recommended to use an avocado that is not over riped. I personally prefer to select an avocado that is already ripen but still maintain a bit of crunch near the pit. This will ensure your end product to have some nutty taste. Over riped avocado will tend to be too soft and do not have the nutty taste. If you prefer sweeter taste, add more condensed milk.
Next, in a mixer, whipped the heavy cream until it starts to increase in volume and become more fluffy. Don't over mix it. Add in the blended avocados and mix for a while more to make sure all are combined nicely.
It's almost done! Add in the vanilla extract at this stage. I am using vanilla bean extract here. The purpose of the vanilla bean extract is to give a gourmet sweetness to the ice cream. In this recipe, I didn't use a lot of sweetener, so the vanilla extract will help to bring out the sweetness. Taste the mixture. Add more condensed milk if you prefer sweeter taste.
Next just pour all the mixture into a container and freeze it!
Freeze for 2 hours and while the mixture not entirely frozen, I would recommend to make some slit using a knife so that it's much easier to scoop them up or serve the ice cream later. If you prefer soft serve ice cream, this is the stage to serve your ice cream. Else, just put it back to the freezer to continue freeze it.
Tadaa, that's the way to prepare simple and easy avocado ice cream! It's super yummy and addictive!
